Vegetable Fried Rice Recipe:
Ingredients:
- 2 cups cooked rice (preferably day-old)
- 1/2 cup diced carrots
- 1/2 cup peas
- 1/2 cup diced bell peppers
- 2 green onions, sliced
- 2 eggs, beaten
- 2 tbsp vegetable oil
- 3 tbsp soy sauce
- Salt and pepper to taste
- Fresh cilantro and sesame seeds for garnish
Instructions:
- Prep the Ingredients: Make sure the rice is cold (day-old rice works best). Dice the vegetables and slice the green onions.
- Scramble the Eggs: Heat a small amount of oil in a wok or large frying pan over medium heat. Pour in the beaten eggs and scramble until just cooked. Remove the eggs and set them aside.
- Stir-Fry the Vegetables: Add a little more oil to the wok. Add the carrots, peas, and bell peppers, and stir-fry until they are tender but still crisp, about 3-4 minutes.
- Add the Rice: Increase the heat to high and add the cold rice to the wok. Stir-fry for a few minutes, ensuring the rice is heated through.
- Season: Add the soy sauce, salt, and pepper. Stir well to ensure the rice is evenly coated with the soy sauce.
- Combine Everything: Add the scrambled eggs back into the wok along with green onions. Toss everything together for another minute.
- Garnish and Serve: Turn off the heat, and garnish the rice with fresh cilantro and sesame seeds. Serve hot directly from the wok.
