Vegetable Donburi Recipe:
Ingredients:
- 2 cups steamed rice
- 1 carrot, sliced
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup shiitake mushrooms, sliced
- 2 green onions, thinly sliced
- 1 tbsp sesame seeds
- 2 tbsp vegetable oil
- Salt to taste
For the Sauce:
- 3 tbsp soy sauce
- 1 tbsp mirin
- 1 tsp sugar
- 1 tsp sesame oil
- 1/2 cup water
- 1 tbsp cornstarch (dissolved in 2 tbsp water)
Instructions:
- Prepare the Sauce: In a small bowl, combine soy sauce, mirin, sugar, sesame oil, and water. Stir well and set aside.
- Stir-Fry the Vegetables: In a large skillet or wok, heat vegetable oil over medium heat. Add the carrots and stir-fry for 2 minutes. Add bell peppers and broccoli, continuing to stir-fry for another 3-4 minutes. Finally, add the shiitake mushrooms and cook for 2 more minutes. The vegetables should be tender yet crisp.
- Add the Sauce: Pour the prepared sauce over the vegetables. Stir the cornstarch and water mixture once more and add it to the skillet. Stir well and cook until the sauce thickens, about 1-2 minutes.
- Assemble the Donburi: Spoon the steamed rice into bowls. Top with the stir-fried vegetables and sauce. Sprinkle with sliced green onions and sesame seeds.
